It has been said but the E30 drift is the best car to learn drifting with. Best way to learn handling is to drive hard. Drifting is useful to know, but it isn't very relevant in racing conditions. My recommendation is driving any track with the BMW M235i. It's a pretty neutral car.

The E30 is great. unbelievable man. you dont know the optimal tune. my civic is dirt nasty low, each drift stitch adds 5hp. Try it out and see how it feels. It's all up to preference. Street 90s tyres are obviously less grippy and allow for easier drifting. More rear pressure further gives you less grip on the rear.
Open pedals app and make sure you are actually at 100% throttle, not trailing brakes, clutch or handbrake while drifting. Also shift quickly so you dont loose boost and wheelspin. If you are using paddles you could try disabling some assists (auto clutch etc) to have faster shift. Don't shift off the limiter too. A buddy just recently drove a Porsche GT3 (non RS) at the Porsche Driving Experience and he had to help the steering wheel rotate while trying to drift. Apparently at least in that car (from what the instructor said) this is normal behavior. Hilarious because this is very similar to how the G29 behaves.

For a sim to do that, the physics/tire model have to give a 'real life' experience/behaviour and I feel that AC does that wonderfully well. The most difficult cars to drive are the ones less downforce, and that follows logic (ex. McLaren F1 GTR vs GT2/GT3 cars, Lotus 98T vs 2015 F1). My only tip for drifting would be to learn how drift works in real life (in terms of physic, not using your real car) and not to jerkoff too quickly. slow acceleration and handling seems to be the way I drift better. The environment doesn't really change much, to be honest.
